Easy quick brownie cookie

Lets try brownie with the cookie base topped with the chocolaty fudge brownie , such that when your bite have both the chocolaty cookie taste , trust me its awesome

i tried baking in a 9*7 inch pan and so it took sometime more to be baked and it remained fudge with a little mess over it and definitely the taste was so good , may be only chocolate lovers will grab it.

Ingredients

Cookie base

  • 1 cup all purpose flour
  • half a cup unsalted butter ( softened at room temperature)
  • 1/3 cup of brown sugar
  • 1/3 cup of granulated sugar
  • 1 egg
  • 1/4 tsp of salt
  • 1/2 tsp of baking soda
  • 1/2 tsp of vanilla essence
  • 1/2 cup semisweet chocolate chips or small chunks

Brownie topping

  • 1 cup of all purpose flour
  • 1 cup of semisweet chocolate chips melted
  • 1-1/3 cup of granulated white sugar
  • 1/4 tsp of salt
  • 1 tsp of vanilla essence
  • 1/2 tsp of baking soda
  • 2 tbsp of coco powder
  • 1 tsp of instant coffee powder

Instructions

  • Take a large bowl, using a hand whisk or electric beater , add in the softened butter , brown and white sugar and cream them well until well incorporated
  • add in the egg and vanilla essence , continue creaming the mixture
  • In separate bowl , mix in the dry ingredients ( flour , salt and soda , choc chips together) ,mix the dry ingredients into the wet mixture and start combining it using a spatula
  • Being a cookie dough , the dough will turn to be little tough and thick
  • Line a 9*7 or 9*8 inch square pan with parchment paper with some butter greased on sides as well
  • spread the cookie dough using your hands ( if sticky use some flour or water ) uniformly in the square pan and keep it aside

Brownie topping

  • In a separate bowl add in the butter , sugar and cream well until it becomes paste kind
  • Add in the remaining 2 eggs and vanilla and continue creaming
  • Add in the melted chocolate into and combine it with the egg mixture ( the melted chocolate should be cooled when mixed with egg)
  • Take separate plate or bowl add in the flour , salt , coco powder , baking soda and coffee powder , give a good mix
  • mix the dry and wet ingredients and yes , the hot brownie batter is ready
  • Take the batter and spread it evenly on the cookie base pan , over the top of the cookie base
  • preheat the oven to 179 degree Celsius or 350 Fahrenheit , and bake it for 50 to 60 minutes and check with a tooth pick until it comes out clean
  • allow it to cool completely , may be to an hour or two , and then yes slice it

Note : sometimes if the brownie remain little wet even after baked for 1 hour , it means your brownie is just fuggy and don over cook it ,proper cooling the brownie will reduce the mess while cutting it.
