And its celebration time! to prepare some party recipes for the kids and for your lovely family and friends all over there.
These are some basic, easy cupcake recipes to prepare quickly and also very simple to make it.
Since we have mentioned it as a celebration time, we prepared it as a return gift for a birthday party for some lovely kids and very much in pleasure to provide them some of these simple small cupcakes.
Since we were to make more than 30 cupcakes, a special mention to my family members my sister in law, who would always love to try some different, exotic and healthy recipes all the way. And yes those recipes have always tasted so well and delicious and we have always enjoyed eating together and sharing it.
I would suggest this recipe for my lovely beginners who are always crazy to bake and try some baking, this will be the best start-up cupcakes to try as its too simple to make it.
- Coffee and cocoa mixture
1 cup unsweetened cocoa powder – ( Hershey unsweetened will go well) – 250 gm.
1 cup hot boiling water
2 tbsp instant coffee powder – I used nest cafe ( anything another instant will also go well)
- Cupcake batter
2 + 1/4 cup all-purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup unsalted butter – softened at room temperature ( note: try to soften the butter and not hard)
2 cups granulated sugar
note: if your sugar looks with bigger granules, its good to give a quick grind and to have a coarse powder.
4 medium-sized eggs.
For the coffee-chocolate mixture
Add in the unsweetened cocoa powder with 2 cups boiling water and add in the coffee powder altogether and mix well to avoid lumps with the cocoa powder or the coffee
This is the basic requirement for this recipe as this forms the main part of the recipe, so make sure to make this ahead before the batter and keep aside.
This mixture, when added in the batter, provides that deep chocolate touch with a touch of coffee when you swallow.
Add in the softened butter, use an electric beater or a large wire whisk to beat until it becomes slightly fluffy
Note: if using a wire whisk, it might require extra effort and more time to whisk and get the texture for all the batters but still we can definitely use it.
once the butter is quite fluffy enough add in the slightly granulated sugar and beat it again until the texture becomes like a paste and drop down and definitely not pouring consistency.
note: since I used proper granulated sugar and the butter-sugar dint mix well and the texture was slight coarse kind so better to powder it if needed.
Now add in the vanilla essence, and the eggs one at a time and not together
beat the batter for each time the eggs are added.
once the butter, sugar, eggs, and vanilla are well combined, add in the chocolate mixture and the dry ingredients on parts together to the above mixture.
note: mix the flour, baking powder, soda, and salt together in a separate bowl and keep side and add it in this stage.
Line your cupcake tray with the cupcake liners and preheat the oven to 180-degree celsius for 10 minutes.
Pour in the batter in the liners arranged and bake and set the timer for 20 to 30 minutes and yes so check it after 15 minutes as each oven varies 🙂
- You can either use a cupcake tray or silicone mold to place the liners inside it.
- or you can also any microwave-safe teacups or small narrow paper cups with the liners arranged in it
- Buying cupcake liners will be a real worth as it will avoid the mess of getting stuck back and also provides a beautiful shape as well.
Once baked well, allow it to cool and remove the cupcakes from the tray or the molds and let it cool completely.
And as I did mention its for the celebration and party time, we made it more special by packing it to make it as some lovely return gifts and it really looked so beautiful
